Ingredients
- 2 cups Pre-cooked white cornmeal (P.A.N. brand)
- 2 cups Warm water
- 1 1/2 cups Shredded mozzarella cheese
- 2 tablespoons Unsalted butter, melted
- 1 teaspoon Salt
- 1/2 teaspoon Sugar(optional)
- 1/2 cup Queso Fresco, crumbled
- 1 tablespoon Vegetable oil

In a large bowl, mix the warm water, salt, sugar, and melted butter until the salt is dissolved.

Gradually add the cornmeal to the water, mixing with your hands to break up any lumps until a smooth dough forms.

Knead the dough for 2 minutes, then fold in the crumbled queso fresco and let it rest for 5 minutes.

Divide the dough into 8 equal-sized balls and flatten them slightly into thick discs.

Create a small indentation in the center of each disc, fill with a tablespoon of mozzarella, and seal the dough around the cheese.

Flatten the stuffed balls into patties about 1/2 inch thick, ensuring there are no cracks on the edges.

Heat a cast-iron skillet or griddle over medium heat with a light coating of oil.

Cook the arepas for 5 to 7 minutes per side until golden brown spots appear and the cheese inside is melted.
