Ingredients

Servings:4
  • 2 cups Long grain white rice
  • 1/2 cup Vegetable oil
  • 1 unit Large red onion, finely chopped
  • 3 cups Water
  • 1 1/2 teaspoons Salt
  • 1/2 cup Salted beef (Tolo Beef), cut into small cubes(optional)
  • 3 units Green chili peppers (Kpakpo Shito)(optional)
  • 1 teaspoon Ginger, minced
  • 1 teaspoon Garlic, minced

Instructions

  1. 1

Wash the rice thoroughly in cold water until the water runs clear, then drain and set aside.

  2. 2

Heat the vegetable oil in a heavy-bottomed pot over medium heat.

  3. 3

Add the chopped onions and salted beef (if using) to the oil and fry until the onions are golden brown and slightly caramelized.

  4. 4

Stir in the minced garlic and ginger, sautéing for another 60 seconds until fragrant.

  5. 5

Add the washed rice to the pot and stir constantly for 3-5 minutes, ensuring every grain is coated in the infused oil.

  6. 6

Pour in the water and add salt; bring the mixture to a rolling boil.

  7. 7

Add the whole green chilies on top, reduce the heat to low, and cover the pot with a tight-fitting lid or foil.

  8. 8

Simmer for 15-20 minutes until the water is absorbed and the rice is tender, then fluff with a fork before serving.
