Ingredients

  • 1.5 lbs Pork shoulder, cut into 1-inch cubes
  • 3 tbsp Achiote paste
  • 0.5 cup Pineapple juice
  • 2 tbsp White vinegar
  • 2 tbsp Chipotle peppers in adobo, minced
  • 1 tsp Dried oregano
  • 1 cup Fresh pineapple, cut into chunks
  • 1 medium Red onion, cut into wedges
  • 0.25 cup Fresh cilantro, chopped(optional)

Instructions

  1. 1

In a large bowl, whisk together achiote paste, pineapple juice, vinegar, chipotle peppers, and oregano until smooth.

  2. 2

Add the pork cubes to the marinade, ensuring every piece is coated. Cover and refrigerate for at least 2 hours (or overnight for best flavor).

  3. 3

If using wooden skewers, soak them in water for 30 minutes prior to grilling.

  4. 4

Thread the marinated pork, pineapple chunks, and red onion wedges onto the skewers, alternating between them.

  5. 5

Preheat a grill or grill pan to medium-high heat.

  6. 6

Grill the skewers for 12-15 minutes, turning occasionally, until the pork is cooked through and has a slight char on the edges.

  7. 7

Garnish with fresh cilantro and serve with warm tortillas or lime wedges.
