Ingredients
- 500 grams Chicken Thighs
- 6 stalks Scallions
- 0.5 cup Soy Sauce
- 0.5 cup Mirin
- 0.25 cup Sake
- 2 tablespoons Brown Sugar
- 1 teaspoon Ginger(optional)
- 10 pieces Bamboo Skewers

Soak bamboo skewers in water for 30 minutes to prevent burning.

In a small saucepan, combine soy sauce, mirin, sake, brown sugar, and ginger. Simmer over medium heat until the liquid reduces by half and becomes syrupy.

Cut the chicken thighs into 1-inch bite-sized pieces.

Cut the white and light green parts of the scallions into 1-inch lengths.

Thread the chicken and scallions onto the skewers, alternating between them, starting and ending with chicken.

Preheat a grill or broiler to high heat.

Grill the skewers for 3-4 minutes per side. Once the chicken starts to brown, brush generously with the prepared tare sauce.

Continue grilling and flipping for another 2-4 minutes, applying sauce 2-3 more times until the chicken is cooked through and glazed.
