Ingredients
- 2 cups Black beans, dried and soaked overnight
- 2 tablespoons Vegetable oil
- 1 large Yellow onion, diced
- 4 pieces Garlic cloves, minced
- 1 tablespoon Smoked paprika
- 1/2 teaspoon Liquid smoke
- 1 large Sweet potato, cubed
- 2 cups Portobello mushrooms, sliced thick
- 2 pieces Bay leaves
- 4 cups Vegetable broth
- 1 tablespoon Soy sauce
- 1/4 cup Fresh parsley, chopped(optional)

In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat.

Sauté the onion and mushrooms until the onions are translucent and mushrooms have released their moisture.

Add the minced garlic, smoked paprika, and bay leaves, stirring for 1 minute until fragrant.

Stir in the soaked black beans, cubed sweet potatoes, vegetable broth, and soy sauce.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes until beans are tender.

Remove the cover and stir in the liquid smoke; simmer for another 10 minutes to thicken the sauce.

Taste and adjust seasoning with salt and pepper as needed.

Serve hot over white rice, garnished with fresh parsley and orange slices on the side.
