- 4 sheets Nori Sheets
- 3 tablespoons Rice Vinegar
- 2 pieces Large Avocado
- 1 piece English Cucumber
- 4 strips Takuan (Pickled Daikon)
- 2 tablespoons Vegetarian Unagi Sauce
- 1 teaspoon Toasted Sesame Seeds
- 2 tablespoons Pickled Ginger(optional)
- 1 teaspoon Wasabi Paste(optional)

Rinse the sushi rice until water runs clear, cook according to package instructions, and fold in rice vinegar while warm.

Place a half-sheet of nori on a bamboo rolling mat covered with plastic wrap.

Spread a thin layer of sushi rice evenly over the nori, then flip it over so the rice is facing down.

Place thin strips of cucumber and takuan horizontally across the center of the nori.

Roll the bamboo mat tightly to form a cylinder, ensuring the filling is enclosed.

Thinly slice the avocado and layer the slices overlapping on top of the roll to resemble caterpillar scales.

Place the plastic wrap back over the avocado-covered roll and use the bamboo mat to gently press the avocado onto the rice.

Slice the roll into 8 pieces using a very sharp, wet knife, then drizzle with vegetarian unagi sauce and sprinkle with sesame seeds.
