  • 4 pieces Pav (Bread Rolls)
  • 3 medium Boiled Potatoes (Mashed)
  • 1 1/2 cups Besan (Gram Flour)
  • 4 tablespoons Green Chutney
  • 2 tablespoons Garlic Chutney (Dry)
  • 1 tablespoon Ginger-Garlic-Chili Paste
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Mustard Seeds
  • 6 leaves Curry Leaves(optional)
  • 1 pinch Baking Soda
  • 2 cups Oil
  • 1 teaspoon Salt

Instructions

    Heat 1 tablespoon of oil and temper with mustard seeds, curry leaves, and ginger-garlic-chili paste.

    Add mashed potatoes, turmeric, and salt; mix well to create the Vada filling and let it cool.

    In a separate bowl, whisk besan, salt, baking soda, and water to create a thick, smooth coating batter.

    Slit the pav buns horizontally without cutting all the way through.

    Spread green chutney and dry garlic chutney on the inside of the pav.

    Stuff a generous portion of the potato mixture inside the pav and press gently to seal.

    Dip the entire stuffed pav into the besan batter, ensuring all sides are evenly coated.

    Deep fry in hot oil on medium flame until the exterior is golden brown and crispy.
