Place the sliced red onions in a bowl of ice water for 10 minutes to reduce their bite, then drain and pat dry.
In a large glass or ceramic bowl, combine the cubed tuna and the minced garlic.
Pour the fresh lime juice over the tuna, ensuring all pieces are submerged or well-coated.
Add the salt, pepper, and aji amarillo paste, stirring gently to incorporate the flavors.
Let the tuna marinate in the refrigerator for 15 to 20 minutes until the outside of the fish turns slightly opaque.
Fold in the sliced radishes, chilled red onions, and chopped cilantro.
Drizzle with olive oil and toss one final time to add a silky finish to the marinade.
Serve immediately in chilled bowls, optionally garnished with extra cilantro leaves.
