Traditional Nigerian Moi Moi

Ingredients
- 3 cups Black-eyed peas (peeled and soaked)
- 3 large Red bell peppers (Tatashe)
- 2 pieces Scotch bonnet peppers (Atarodo)
- 2 medium Onions
- 1/2 cup Vegetable oil
- 2 tablespoons Crayfish powder
- 3 cubes Bouillon cubes
- 3 large Hard-boiled eggs (sliced)(optional)
- 1 cup Cooked flaked mackerel(optional)
- 1 1/2 cups Warm water or stock
- 1 teaspoon Salt

Peel the black-eyed peas by soaking them in water and rubbing them between your palms to remove the skins, then rinse thoroughly.

Blend the peeled beans, red bell peppers, scotch bonnets, and onions with a little water until you achieve a very smooth, silky consistency.

Pour the batter into a large bowl and stir in the vegetable oil, crayfish powder, crushed bouillon cubes, and salt.

Gradually add the warm water or stock to the batter, stirring continuously until the consistency is light enough to pour but not watery.

Prepare your containers (uma leaves, foil containers, or ramekins) and lightly grease them with oil.

Scoop the batter into the containers, add a slice of boiled egg or flaked fish into each, and seal tightly.

Place a steamer or a pot with a base of stalks/foil at the bottom into a pot with a little boiling water and arrange the containers inside.

Steam on medium heat for 45 to 60 minutes, adding water to the pot as needed, until a toothpick inserted into the center comes out clean.
