Ingredients
- 3 pieces Stale French bread or rolls
- 400 ml Coconut milk
- 100 g Dried shrimp (soaked and rinsed)
- 500 g Fresh shrimp (peeled and deveined)
- 1/2 cup Roasted unsalted peanuts
- 1/2 cup Roasted cashews
- 1/4 cup Dendê oil (Red Palm Oil)
- 1 large Onion, finely chopped
- 1 tablespoon Fresh ginger, grated
- 2 cups Fish or shrimp stock
- 1/4 cup Fresh cilantro(optional)

Tear the stale bread into small pieces and soak them in the coconut milk and one cup of stock until soft.

In a blender, process the soaked bread mixture, dried shrimp, peanuts, and cashews until a smooth paste forms.

Heat the dendê oil in a large heavy-bottomed pot over medium heat.

Sauté the onions and grated ginger in the oil until the onions are translucent and fragrant.

Pour the blended bread and nut mixture into the pot, adding the remaining stock slowly while stirring constantly.

Cook the mixture over low-medium heat for about 15-20 minutes, stirring continuously to prevent sticking, until it thickens to a creamy consistency.

Add the fresh shrimp to the pot and cook for another 5 minutes until they turn pink and are fully cooked.

Season with salt to taste and garnish with fresh cilantro before serving hot with white rice or acarajé.
