  • 12 pieces Chicken wings (mid-joint and tip)
  • 1/2 cup Soy sauce
  • 1/2 cup Mirin
  • 1/4 cup Sake
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Fresh ginger, grated
  • 1 piece Garlic clove, smashed
  • 1/2 teaspoon Salt
  • 1 teaspoon Toasted sesame seeds(optional)
  • 1/2 teaspoon Shichimi Togarashi (Japanese seven spice)(optional)

Instructions

    Prepare the tare sauce by combining soy sauce, mirin, sake, sugar, ginger, and garlic in a small saucepan.

    Simmer the sauce over medium-low heat for 10-15 minutes until it reduces by one-third and becomes slightly syrupy.

    Stretch each chicken wing out and insert two bamboo skewers parallel through the meat to keep the wing flat and maximize surface area.

    Lightly season both sides of the skewered wings with a pinch of salt.

    Preheat your grill or broiler to medium-high heat and lightly oil the grates.

    Grill the wings for 5-7 minutes per side until the skin is crispy and golden brown.

    During the last 3 minutes of cooking, generously brush both sides of the wings with the prepared tare sauce.

    Remove from heat once the sauce is bubbly and caramelized, then sprinkle with sesame seeds and Shichimi Togarashi before serving.
