Strawberry Matcha Tiramisu

Ingredients
- 24 pieces Ladyfinger biscuits (Savoiardi)
- 500 g Mascarpone cheese
- 1 cup Heavy whipping cream
- 3 tablespoons Ceremonial grade matcha powder
- 1 1/2 cups Hot water (80°C)
- 1/2 cup Granulated sugar
- 2 cups Fresh strawberries, sliced
- 1 teaspoon Vanilla extract
- 3 large Egg yolks
- 1 tablespoon Freeze-dried strawberry powder(optional)

Whisk 2 tablespoons of matcha powder into the hot water until smooth and set aside to cool completely.

In a large bowl, whisk egg yolks and sugar over a double boiler until pale and thick, then let cool.

Fold the mascarpone cheese and vanilla extract into the cooled egg yolk mixture until smooth.

In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold into the mascarpone mixture.

Quickly dip each ladyfinger into the matcha tea and line the bottom of an 8x8 inch glass dish.

Spread half of the mascarpone cream over the ladyfingers and layer half of the sliced strawberries on top.

Repeat with a second layer of matcha-dipped ladyfingers, remaining cream, and remaining strawberries.

Dust the top with the remaining 1 tablespoon of matcha powder and refrigerate for at least 6 hours before serving.
