Ingredients
- 3 tablespoons Vegetable oil
- 2 units Large onions, finely chopped
- 1 unit Green bell pepper, diced
- 2 units Bird's eye chilies, seeded and minced
- 2 cloves Garlic, minced
- 1 tablespoon Fresh ginger, grated
- 2 tablespoons Mild or hot curry powder
- 3 units Large carrots, grated
- 400 grams Canned chopped tomatoes
- 410 grams Baked beans in tomato sauce
- 1 teaspoon Salt and black pepper
- 1 handful Fresh coriander for garnish(optional)
Instructions

Heat the vegetable oil in a large pan or pot over medium heat.

Add the chopped onions and sauté for about 5 minutes until they become translucent and soft.

Stir in the diced green pepper, minced chilies, garlic, and grated ginger, cooking for another 2 minutes.

Add the curry powder to the pan and stir constantly for 1 minute to release the aromatic oils.

Mix in the grated carrots and ensure they are well coated with the spice and onion mixture.

Pour in the canned tomatoes and simmer on low heat for 10 to 15 minutes until the mixture thickens.

Stir in the baked beans and cook for a final 5 minutes until heated through.

Season with salt and pepper to taste, then serve warm or cold garnished with fresh coriander.
