Ingredients

  • 2 packs Ramen noodles
  • 4 cups Chicken or vegetable broth
  • 3 tablespoons Red miso paste
  • 2 teaspoons Chili oil (Rayu)
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Sesame oil
  • 2 units Soft-boiled egg(optional)
  • 2 stalks Green onions, sliced
  • 0.25 cup Corn kernels(optional)

Instructions

    In a medium pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.

    Whisk in the miso paste and chili oil, stirring constantly to form a smooth paste.

    Slowly pour in the broth while whisking to ensure the miso is fully incorporated. Bring to a gentle simmer.

    In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain well.

    Divide the cooked noodles into two bowls.

    Pour the hot spicy miso broth over the noodles.
