Ingredients

Servings:4
  • 1 lb Ground beef (90% lean)
  • 4 cups Cooked white or brown rice
  • 3 tbsp Gochujang (Korean chili paste)
  • 2 tbsp Soy sauce
  • 2 tsp Sesame oil
  • 1 tsp Fresh ginger, minced
  • 3 cloves Garlic, minced
  • 1 cup Shredded carrots
  • 2 cups Baby spinach
  • 1 medium Cucumber, thinly sliced
  • 4 large Eggs
  • 1 tsp Toasted sesame seeds(optional)

Instructions

  1. 1

In a small bowl, whisk together the gochujang, soy sauce, sesame oil, and minced ginger to create the sauce.

  2. 2

Heat a large skillet over medium-high heat and brown the ground beef until fully cooked, draining any excess fat.

  3. 3

Add the minced garlic and half of the prepared sauce to the beef, stirring for 2 minutes until caramelized and fragrant.

  4. 4

In a separate pan, lightly sauté the shredded carrots and spinach with a splash of water until just wilted, then set aside.

  5. 5

Fry the four eggs in a non-stick skillet until the whites are set but the yolks remain runny.

  6. 6

Divide the cooked rice into four bowls as the base.

  7. 7

Arrange the spicy beef, sautéed carrots, spinach, and fresh cucumber slices on top of the rice in sections.

  8. 8

Top each bowl with a fried egg, the remaining sauce, and a sprinkle of sesame seeds before serving.
