- 3 large Ripe plantains (yellow with black spots)
- 2 tablespoons Fresh ginger, finely grated
- 1 teaspoon Chili powder or Cayenne pepper
- 1/2 teaspoon Salt
- 2 cups Vegetable oil for frying
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Onion powder(optional)
- 1 tablespoon Water

Peel the plantains by cutting off the ends and slicing through the skin lengthwise, then cut the flesh into 1-inch cubes.

In a large mixing bowl, combine the grated ginger, chili powder, salt, garlic powder, onion powder, and a tablespoon of water to create a spice paste.

Add the plantain cubes to the bowl and toss thoroughly until every piece is evenly coated with the ginger-spice mixture.

Let the seasoned plantains marinate for at least 10 minutes to allow the flavors to penetrate the fruit.

Heat the vegetable oil in a deep frying pan or skillet over medium-high heat until it reaches approximately 350 degrees Fahrenheit.

Carefully place the plantain cubes into the hot oil in batches, being careful not to overcrowd the pan.

Fry for 3 to 5 minutes, turning occasionally, until the plantains are golden brown and caramelized on all sides.
