Spicy Chipotle BLT With Fried Egg

Ingredients
- 3 strips Thick-cut bacon slices
- 2 slices Sourdough bread
- 1 piece Large egg
- 2 tablespoons Mayonnaise
- 1 tablespoon Chipotle peppers in adobo sauce, minced
- 1/2 teaspoon Lime juice
- 2 leaves Romaine lettuce leaves
- 2 slices Beefsteak tomato
- 1 tablespoon Butter
- 1 pinch Salt and black pepper

Place the bacon in a cold skillet and cook over medium heat until crispy, then drain on paper towels.

In a small bowl, whisk together the mayonnaise, minced chipotle peppers, and lime juice to create the spicy spread.

Butter one side of each bread slice and toast in the skillet until golden brown.

In the same skillet, melt a small knob of butter and crack the egg, frying it sunny-side up or over-easy until the whites are set but the yolk remains runny.
