Spam and Sausage Kimchi Jjigae

Ingredients
- 1 cup Aged Kimchi
- 6 ounces Spam (cubed)
- 2 links Smoked Sausage (sliced)
- 1 large Leek (sliced diagonally)
- 1 tablespoon Gochugaru (Korean red chili flakes)
- 1/2 tablespoon Gochujang (Korean chili paste)
- 1 tablespoon Minced Garlic
- 1 teaspoon Soy Sauce
- 2 cups Chicken Broth or Anchovy Stock
- 4 ounces Firm Tofu (sliced)(optional)

In a small pot, combine the cubed Spam and sliced sausages, searing them over medium heat for 2 minutes to release their oils.

Add the aged kimchi and minced garlic to the pot, sautéing with the meats until the kimchi becomes translucent.

Stir in the gochugaru and gochujang, coating the ingredients thoroughly to develop a deep flavor base.

Pour in the chicken broth or stock and bring the mixture to a vigorous boil.

Reduce the heat to a simmer and add the soy sauce and sliced leeks.

Gently place the tofu slices on top if using, and let the stew simmer for 10 minutes to allow the flavors to meld.

Taste the broth; if it is too sour from the kimchi, add a small pinch of sugar to balance the acidity.
