Ingredients
- 1 1/2 pounds firm white fish (cod, halibut, or swordfish), cut into 1-inch cubes
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 tablespoon dried Greek oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 large red onion, cut into 1-inch chunks
- 4 pieces lemon wedges for serving(optional)
- 1 tablespoon fresh parsley, chopped(optional)

In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the marinade.

Place the fish cubes into a large resealable bag or shallow dish and pour the marinade over them, ensuring all pieces are coated.

Refrigerate the fish to marinate for at least 30 minutes, but no longer than 1 hour to prevent the lemon juice from 'cooking' the fish.

If using wooden skewers, soak them in water for 20 minutes while the fish marinates to prevent burning on the grill.

Thread the marinated fish cubes onto the skewers, alternating with the chunks of red onion.

Preheat a grill or grill pan over medium-high heat and lightly oil the grates.

Grill the skewers for 3 to 4 minutes per side, or until the fish is opaque throughout and has a slight char.

Remove from heat, sprinkle with fresh parsley, and serve immediately with extra lemon wedges.
