- 2 tablespoons Roasted Peanuts
- 1 1/2 tablespoons Palm Sugar
- 2 tablespoons Fish Sauce
- 2 tablespoons Lime Juice
- 1 tablespoon Dried Shrimp(optional)
- 1/2 cup Long Beans (cut into 1-inch pieces)
- 1/2 cup Cherry Tomatoes (halved)

Peel the green papaya and shred it into thin strips using a mandoline or a large grater; set aside in ice water for extra crunch.

In a large mortar and pestle, pound the garlic and chilies together until they form a coarse paste.

Add the dried shrimp and roasted peanuts to the mortar, lightly crushing them to release their flavors.

Add the long beans and pound lightly just to bruise them, ensuring they stay crunchy.

Mix in the palm sugar, fish sauce, and lime juice, stirring with a spoon while lightly pounding to dissolve the sugar.
