Place the rinsed dry beans into a 6-quart slow cooker.
Add the diced onion, bell pepper, celery, and minced garlic on top of the beans.
Nestle the smoked turkey wings into the vegetable and bean mixture.
Pour in the chicken broth and add the Cajun seasoning, thyme, bay leaves, and cayenne pepper.
Cover and cook on Low for 8 to 10 hours (or High for 5 to 6 hours) until the beans are very tender.
Remove the turkey wings; pull the meat off the bones, discard bones and skin, and return the meat to the pot.
Take a heavy spoon and mash about a half-cup of the beans against the side of the slow cooker to create a creamy texture.
Stir well and serve hot over bowls of fluffy white rice.
