Ingredients
- 2 lbs Beef chuck steak, cut into 1-inch cubes
- 4 oz Massaman curry paste
- 14 oz Full-fat coconut milk
- 1/2 cup Beef broth
- 1 1/2 lbs Potatoes, peeled and cubed
- 1 large Yellow onion, sliced
- 2 tbsp Fish sauce
- 2 tbsp Brown sugar
- 1 tbsp Tamarind paste
- 1/4 cup Roasted peanuts(optional)
- 1 piece Cinnamon stick

Place the cubed beef, potatoes, and sliced onions into the slow cooker insert.

In a small bowl, whisk together the coconut milk, Massaman curry paste, beef broth, fish sauce, brown sugar, and tamarind paste until smooth.

Pour the liquid mixture over the beef and vegetables in the slow cooker.

Add the cinnamon stick and stir gently to ensure everything is submerged.

Cover and cook on Low for 8 hours or on High for 4 to 5 hours until the beef is fork-tender.

Remove the cinnamon stick before serving.

Stir in the roasted peanuts just before serving to maintain their crunch.
