  • 500 grams Large Shrimp (with heads and tails)
  • 40 grams Tamarind Soup Base Mix
  • 6 cups Water or Rice Wash
  • 2 medium Tomato (quartered)
  • 1 medium Red Onion (quartered)
  • 1 small Radish (sliced into rounds)
  • 1 bunch String Beans (cut into 2-inch pieces)
  • 1 medium Eggplant (sliced)
  • 1 bunch Water Spinach (Kang-kong)
  • 2 pieces Long Green Chili (Siling Haba)
  • 2 tablespoons Fish Sauce (Patis)

Instructions

    In a large pot, bring the water or rice wash to a boil.

    Add the tomatoes and onions, then simmer for 5 minutes until softened.

    Pour in the tamarind soup base mix and stir until fully dissolved.

    Add the radish and eggplant, cooking for about 3 minutes until slightly tender.

    Add the shrimp and long green chilis; cook until the shrimp turn pink and opaque, about 3-4 minutes.

    Stir in the string beans and cook for another 2 minutes.

    Add the water spinach (kang-kong) and turn off the heat, allowing the residual heat to wilt the leaves.

    Season with fish sauce to taste and serve hot with steamed white rice.
