  • 1 1/2 lbs Yellow potatoes (Yukon Gold)
  • 3 tablespoons Aji Amarillo paste
  • 4 tablespoons Lime juice
  • 3 tablespoons Vegetable oil
  • 12 ounces Cooked medium shrimp, peeled and deveined
  • 1/4 cup Mayonnaise
  • 1 whole Avocado, sliced into small wedges
  • 1 whole Hard-boiled egg, sliced(optional)
  • 4 sliced Black olives (Botija style)(optional)
  • 1 teaspoon Salt

Instructions

    Boil the potatoes in salted water until tender, then peel and mash them until completely smooth while still warm.

    Mix the mashed potatoes with aji amarillo paste, 2 tablespoons of lime juice, vegetable oil, and salt until a moldable dough forms.

    Allow the potato mixture to cool completely to room temperature.

    In a small bowl, toss the cooked shrimp with mayonnaise and the remaining lime juice.

    Using a small ring mold or your hands, form the potato mixture into small 2-inch discs or cylinders.

    Place a small slice of avocado on top of each potato disc.

    Top each bite with one or two seasoned shrimp.

    Garnish with a small slice of hard-boiled egg or a sliver of black olive before serving chilled.
