Sesame Ginger Soba Noodles

Ingredients
- 6 oz Soba noodles (buckwheat)
- 2 tbsp Soy sauce
- 1 tbsp Toasted sesame oil
- 1 tbsp Rice vinegar
- 1 tsp Fresh ginger, grated
- 1 tsp Honey or maple syrup
- 2 stalks Green onions, sliced
- 1 tsp Toasted sesame seeds(optional)
- 0.5 cup Edamame, shelled(optional)

Bring a large pot of water to a boil. Cook soba noodles according to package instructions (usually 5-6 minutes). Do not overcook.

Drain the noodles and immediately rinse under cold running water, tossing them to remove excess starch until completely cooled.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, grated ginger, and honey.

Place the cooled noodles in a large mixing bowl. Add the dressing and toss thoroughly to coat.

Fold in the sliced green onions and edamame if using.

Garnish with toasted sesame seeds and serve immediately or chilled.
