Chicken thighs marinated in toasted sesame oil and minced garlic.

Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
In a small saucepan, combine soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger.
Simmer the sauce over medium heat for 10 minutes until it thickens into a glossy glaze, then set aside to cool.
Cut the chicken thighs into 1-inch bite-sized cubes and place them in a bowl.
Toss the chicken with the toasted sesame oil and half of the cooled sauce to marinate for 20 minutes.
Thread the chicken onto skewers, alternating each piece with a segment of green onion.
Preheat a grill or broiler to medium-high and cook the skewers for 4-5 minutes per side.
Brush the remaining sauce over the skewers during the last 2 minutes of cooking and garnish with sesame seeds.
