Sausage and Borlotti Bean Bake

Ingredients
- 6 links Spicy Italian sausages
- 2 cans (15oz) Borlotti beans, drained and rinsed
- 1 large Red onion, sliced
- 3 cloves Garlic cloves, minced
- 1 1/2 cups Canned crushed tomatoes
- 1/2 cup Chicken stock
- 3 tablespoons Balsamic vinegar
- 1 tablespoon Fresh rosemary, chopped
- 2 tablespoons Extra virgin olive oil
- 1 teaspoon Brown sugar(optional)

Preheat your oven to 400°F (200°C).

In a large oven-proof skillet or casserole dish, brown the sausages in olive oil over medium heat for 5 minutes until golden but not cooked through.

Remove sausages from the pan and set aside; in the same pan, sauté the sliced onions until softened and slightly caramelized.

Add the minced garlic and rosemary to the onions, cooking for 1 minute until fragrant.

Stir in the borlotti beans, crushed tomatoes, chicken stock, and 1 tablespoon of balsamic vinegar, scraping the bottom of the pan to release any browned bits.

Nestle the sausages back into the bean mixture and bake in the oven for 20 to 25 minutes until the sauce has thickened.

While the bake is in the oven, simmer the remaining balsamic vinegar and brown sugar in a small saucepan until reduced by half into a thick glaze.

Drizzle the balsamic reduction over the finished dish before serving hot with crusty bread.
