  • 250 grams Sashimi-grade salmon fillet
  • 4 tablespoons Ponzu sauce
  • 1 handful Radish sprouts (Kaiware)(optional)
  • 1 stalk Green onions, finely sliced
  • 1 teaspoon Toasted sesame seeds
  • 1 teaspoon Sriracha or chili oil(optional)
  • 0.25 cup Cucumber, thinly sliced(optional)

Instructions

    Ensure the salmon is very cold. Using a sharp knife, slice the salmon against the grain into 1/4-inch thick slices.

    Arrange the cucumber slices on a chilled plate as a base.

    Lay the salmon slices over the cucumbers in an overlapping pattern.

    Drizzle the ponzu sauce evenly over the salmon slices.

    Garnish with sliced green onions, sesame seeds, and radish sprouts.
