- 250 grams Sashimi-grade salmon fillet
- 4 tablespoons Ponzu sauce
- 1 handful Radish sprouts (Kaiware)(optional)
- 1 stalk Green onions, finely sliced
- 1 teaspoon Toasted sesame seeds
- 1 teaspoon Sriracha or chili oil(optional)
- 0.25 cup Cucumber, thinly sliced(optional)

Ensure the salmon is very cold. Using a sharp knife, slice the salmon against the grain into 1/4-inch thick slices.
