Ingredients
- 2 cups Korean rice cakes (tteok)
- 1 can (12oz) Spam, sliced into strips
- 2 tablespoons Gochujang (Korean chili paste)
- 1 tablespoon Gochugaru (Korean chili flakes)
- 1 tablespoon Soy sauce
- 1 tablespoon Minced garlic
- 1 teaspoon Sugar
- 2 cups Chicken or beef broth
- 3 stalks Green onions, chopped
- 1/2 medium Onion, sliced
- 1/2 cup Kimchi, chopped
- 1 teaspoon Sesame oil(optional)

Soak the rice cakes in cold water for 15 minutes to soften, then drain.

In a small bowl, whisk together the gochujang, gochugaru, soy sauce, garlic, and sugar to create the sauce base.

In a shallow pot or large skillet, sear the Spam slices over medium-high heat until they are golden and crispy on both sides.

Remove half of the crispy Spam and set aside; add the sliced onions and kimchi to the pot with the remaining Spam.

Pour in the broth and the prepared sauce base, stirring well to dissolve the paste.

Bring the liquid to a boil, then add the soaked rice cakes.

Simmer for 5-8 minutes until the broth has thickened into a concentrated glaze and the rice cakes are soft and chewy.

Top with the reserved crispy Spam, chopped green onions, and a drizzle of sesame oil before serving.
