  • 1 cup Semolina (Rava/Sooji)
  • 3/4 cup Plain Yogurt
  • 1/2 cup Water
  • 1 teaspoon Eno Fruit Salt
  • 1/2 cup Grated Coconut
  • 1/4 cup Fresh Mint Leaves
  • 1/4 cup Pomegranate Seeds
  • 1 piece Green Chili
  • 1/2 teaspoon Mustard Seeds
  • 5 leaves Curry Leaves(optional)
  • 1 teaspoon Salt

Instructions

    In a mixing bowl, combine the semolina, yogurt, and salt. Mix well to form a thick batter.

    Add water gradually to reach a dropping consistency, then let the batter rest for 15 minutes to allow the semolina to absorb moisture.

    Prepare the chutney by blending coconut, mint leaves, green chili, and salt with a little water until smooth.

    Stir the pomegranate seeds into the blended chutney and set aside in a serving bowl.

    Grease the idli steamer plates with a drop of oil and bring water to a boil in the steamer pot.

    Just before steaming, add the Eno fruit salt to the rava batter and stir gently until it becomes frothy.

    Pour the batter into the idli molds and steam on medium-high heat for 10-12 minutes.

    Let the idlis cool for 2 minutes before removing them from the molds; serve hot with the minty pomegranate chutney.
