Ingredients
- 30 oz Canned black beans, drained and rinsed
- 8 oz Smoked andouille or chorizo sausage, sliced
- 4 slices Bacon, chopped
- 1 medium Yellow onion, finely diced
- 4 cloves Garlic, minced
- 1 1/2 cups Beef broth
- 1 tsp Smoked paprika
- 2 pieces Bay leaves
- 1/4 cup Fresh orange juice
- 2 tbsp Fresh cilantro or parsley, chopped(optional)

In a large pot or Dutch oven, cook the chopped bacon over medium heat until it begins to crisp and release its fat.

Add the sliced sausage to the pot and brown for 3-4 minutes until golden on the edges.

Stir in the diced onion and cook for 5 minutes until softened, then add the minced garlic and cook for 1 minute more.

Add the drained black beans, beef broth, smoked paprika, and bay leaves to the pot.

Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 15-20 minutes.

Use the back of a wooden spoon to mash a small portion of the beans against the side of the pot to thicken the sauce.

Stir in the fresh orange juice and season with salt and pepper to taste.

Remove bay leaves and serve hot over white rice, garnished with fresh herbs.
