Ingredients
- 14 oz Extra-firm tofu, pressed and cubed
- 3 tbsp Massaman curry paste
- 1 cup Full-fat coconut milk
- 2 cups Broccoli florets
- 1 large Red bell pepper, sliced
- 1/4 cup Roasted peanuts, crushed
- 2 tbsp Soy sauce or Tamari
- 1 tbsp Brown sugar
- 2 tbsp Vegetable oil
- 1 cup Small potato, parboiled and diced
- 1 tbsp Fresh lime juice

Heat one tablespoon of oil in a large wok or skillet over medium-high heat.

Add the cubed tofu and fry until golden brown and crispy on all sides, then remove and set aside.

In the same pan, add the remaining oil and the Massaman curry paste, stirring for 1 minute until fragrant.

Pour in half of the coconut milk and stir to dissolve the paste, allowing it to bubble slightly.

Add the broccoli, bell peppers, and parboiled potatoes, stir-frying for 4-5 minutes until vegetables are tender-crisp.

Stir in the remaining coconut milk, soy sauce, brown sugar, and the cooked tofu.

Simmer for 2 minutes to allow the sauce to thicken and coat everything evenly.

Remove from heat, stir in the lime juice, and garnish with crushed peanuts before serving over jasmine rice.
