Ingredients
- 2 cans (15oz) Canned chickpeas, drained and rinsed
- 2 tablespoons Vegetable oil
- 1 medium Yellow onion, finely diced
- 3 cloves Garlic, minced
- 1 tablespoon Fresh ginger, grated
- 1 can (14.5oz) Crushed tomatoes
- 2 teaspoons Garam masala
- 1/2 teaspoon Ground turmeric
- 1 teaspoon Ground cumin
- 1/2 cup Vegetable broth
- 1/4 cup Fresh cilantro, chopped(optional)
- 1 tablespoon Lemon juice

Heat the vegetable oil in a large pot or deep skillet over medium heat.

Add the diced onion and sauté for 5-7 minutes until translucent and slightly golden.

Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant.

Add the garam masala, turmeric, and cumin, stirring constantly for 30 seconds to toast the spices.

Pour in the crushed tomatoes and vegetable broth, stirring to combine and scraping any bits off the bottom.

Add the rinsed chickpeas and bring the mixture to a gentle simmer.

Cover and cook for 10 minutes to allow the flavors to meld and the sauce to thicken.
