- 1 large Red onion, finely minced
- 2 tablespoons Berbere spice blend
- 3 cloves Garlic, minced
- 1 teaspoon Ginger, grated
- 1/4 cup Vegetable oil or Niter Kibbeh
- 1 tablespoon Tomato paste
- 3 cups Water
- 1 teaspoon Salt
- 1 whole Jalapeño, sliced(optional)

In a dry pot over medium heat, sauté the minced onions until they are translucent and slightly browned, adding a splash of water if they stick.

Add the oil (or spiced butter) and the berbere spice blend, stirring constantly for 2-3 minutes to toast the spices.

Stir in the minced garlic, grated ginger, and tomato paste, cooking for another 2 minutes until fragrant.

Gradually whisk in the chickpea flour, stirring vigorously to combine with the oil and spice base.

Slowly pour in the water while whisking continuously to ensure no lumps form in the stew.

Bring the mixture to a gentle simmer and cook for 10-15 minutes, stirring frequently as the stew thickens to a smooth consistency.
