Ingredients

Servings:4
  • 1 cup Chickpea flour (besan)
  • 1 large Red onion, finely minced
  • 2 tablespoons Berbere spice blend
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1/4 cup Vegetable oil or Niter Kibbeh
  • 1 tablespoon Tomato paste
  • 3 cups Water
  • 1 teaspoon Salt
  • 1 whole Jalapeño, sliced(optional)

Instructions

  1. 1

In a dry pot over medium heat, sauté the minced onions until they are translucent and slightly browned, adding a splash of water if they stick.

  2. 2

Add the oil (or spiced butter) and the berbere spice blend, stirring constantly for 2-3 minutes to toast the spices.

  3. 3

Stir in the minced garlic, grated ginger, and tomato paste, cooking for another 2 minutes until fragrant.

  4. 4

Gradually whisk in the chickpea flour, stirring vigorously to combine with the oil and spice base.

  5. 5

Slowly pour in the water while whisking continuously to ensure no lumps form in the stew.

  6. 6

Bring the mixture to a gentle simmer and cook for 10-15 minutes, stirring frequently as the stew thickens to a smooth consistency.

  7. 7

Season with salt to taste and add the sliced jalapeño for the final 2 minutes of cooking.

  8. 8

Serve hot with injera or crusty bread.
