Ingredients
- 1 pound chicken breast, thinly sliced
- 1/4 cup soy sauce
- 1 tablespoon fresh ginger, minced
- 2 pieces garlic cloves, minced
- 1 tablespoon honey
- 2 tablespoons vegetable oil
- 2 cups broccoli florets
- 1 large red bell pepper, sliced
- 1/2 cup carrots, julienned
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil(optional)

In a small bowl, whisk together the soy sauce, ginger, garlic, honey, and cornstarch to create the sauce.

Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced chicken to the pan and cook until browned and no longer pink, about 5-6 minutes.

Remove the chicken from the pan and set it aside on a plate.

Add the remaining tablespoon of oil to the same pan and toss in the broccoli, peppers, and carrots.

Stir-fry the vegetables for 3-4 minutes until they are tender-crisp and vibrant in color.

Return the chicken to the pan and pour the sauce mixture over the top.

Toss everything together for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
