  • 2 tablespoons Olive oil
  • 8 ounces Spanish or Portuguese Chorizo, sliced
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 1 1/2 pounds Yukon Gold potatoes, peeled and diced
  • 6 cups Chicken or vegetable broth
  • 4 cups Collard greens, stems removed and thinly sliced into ribbons
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 pinch Red pepper flakes(optional)

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add the sliced chorizo and cook until browned and the fat has rendered, about 5 minutes.

    Remove half of the chorizo with a slotted spoon and set aside for garnish.

    Add the diced onion to the pot and sauté until translucent, then stir in the garlic for 1 minute.

    Add the potatoes and broth; bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are fork-tender.

    Use a potato masher to lightly crush some of the potatoes directly in the pot to thicken the base.

    Stir in the thinly sliced collard greens and simmer for an additional 5 minutes until they are bright green and tender.

    Season with salt, pepper, and red pepper flakes; serve hot topped with the reserved crispy chorizo.
