Ingredients
- 500 ml Whole milk
- 400 g Granulated sugar
- 150 g All-purpose flour
- 50 g Unsalted butter, melted
- 2 units Large eggs
- 1/2 tsp Ground cinnamon
- 1 tsp Lemon zest(optional)
- 1 pinch Salt
- 1 tsp Vanilla extract

Preheat your oven to 190°C (375°F) and generously grease a standard 12-cup muffin tin with butter and flour.

In a large mixing bowl, whisk together the sugar and the eggs until the mixture is pale and well combined.

Stir in the melted butter, lemon zest, and vanilla extract into the egg mixture.

Gradually sift in the flour, cinnamon, and salt, whisking gently to avoid large lumps.

Slowly pour in the milk while whisking continuously until the batter is completely smooth and liquid.

Fill each muffin cup about 3/4 full with the batter; the mixture will be very thin, which is normal.

Bake for 35 to 40 minutes, or until the tops are golden brown and the edges are slightly caramelized.

Allow the tarts to cool completely in the tin before removing them, as they need time to set their firm texture.
