Preheat your oven to 400°F (200°C) and grease a 9-inch cast iron skillet or square baking pan.
In a small bowl, prepare the pimento cheese swirl by mixing the shredded cheddar, drained pimentos, mayonnaise, and cayenne pepper until well combined.
In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
In a separate medium bowl, beat the eggs and then whisk in the buttermilk and melted butter.
Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
Pour half of the cornbread batter into the prepared skillet, then drop small dollops of the pimento cheese mixture across the surface.
Cover with the remaining cornbread batter and use a knife to gently swirl the pimento cheese into the top layer.
Bake for 25-30 minutes until the edges are golden brown and a toothpick inserted into the center comes out clean.
