Pastel De Queijo Cheese Fried Pastry

Ingredients
- 3 cups All-purpose flour
- 1 cup Warm water
- 1 tablespoon Cachaça or white vinegar
- 1 tablespoon Vegetable oil (for dough)
- 1 teaspoon Salt
- 2 cups Mozzarella cheese, shredded
- 1 cup Queijo Minas or Monterey Jack
- 1/2 teaspoon Dried oregano(optional)
- 1 quart Vegetable oil for deep frying

In a large bowl, mix the flour and salt, then create a well in the center.

Pour in the warm water, oil, and cachaça; mix until a shaggy dough forms.

Knead the dough on a floured surface for 10 minutes until smooth and elastic.

Wrap the dough in plastic and let it rest at room temperature for at least 30 minutes.

Roll the dough out very thin (about 2mm) and cut into rectangles or circles.

Place a portion of cheese and a pinch of oregano in the center of each piece.

Fold the dough over the filling and press the edges firmly with a fork to seal.

Fry in hot oil (350°F/175°C) until golden brown and bubbly, then drain on paper towels.
