Ingredients
- 4 large Ripe plantains (yellow with black spots)
- 2 tablespoons Extra virgin olive oil
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Cayenne pepper
- 1 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
- 1/4 teaspoon Ground cinnamon
- 1/2 teaspoon Sea salt
- 1/4 teaspoon Black pepper
- 1 tablespoon Fresh lime juice(optional)
- 1 tablespoon Fresh cilantro, chopped(optional)
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone mat.
- 2
Peel the plantains by cutting off the ends and slicing through the skin lengthwise, then slice them into 1/2-inch thick rounds on a diagonal.
- 3
In a large mixing bowl, whisk together the olive oil, smoked paprika, cayenne, garlic powder, onion powder, cinnamon, salt, and pepper.
- 4
Add the plantain slices to the bowl and toss thoroughly until every piece is evenly coated with the spice mixture.
- 5
Arrange the plantains in a single layer on the prepared baking sheet, ensuring they are not touching so they roast rather than steam.
- 6
Bake for 12-15 minutes, then remove from the oven and carefully flip each slice using a spatula.
- 7
Return to the oven and bake for an additional 10-12 minutes until the edges are golden brown and caramelized.
- 8
Remove from the oven, drizzle with fresh lime juice if desired, and garnish with chopped cilantro before serving warm.
