  • 2 cups Peeled brown or black-eyed beans
  • 1 medium Red bell pepper
  • 1 small Scotch bonnet pepper
  • 1 medium Onion
  • 1/4 cup Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Bouillon powder
  • 1/2 cup Warm water
  • 1 tablespoon Crayfish powder(optional)
  • 1 can Cooking spray

Instructions

    Soak the peeled beans in water for 10 minutes, then drain thoroughly.

    Blend the beans, bell pepper, scotch bonnet, and onion with the warm water until a smooth, thick paste forms.

    Pour the batter into a large bowl and whisk vigorously with a wooden spoon for 5 minutes to incorporate air.

    Stir in the vegetable oil, salt, bouillon powder, and crayfish powder until well combined.

    Preheat your oven to 375°F (190°C) and generously grease a muffin tin with cooking spray.

    Fill each muffin cup about three-quarters full with the bean batter.

    Bake for 20-25 minutes or until the tops are golden brown and a toothpick comes out clean.

    Allow the akara to cool in the tin for 5 minutes before gently popping them out to serve.
