  • 8 ounces Lo mein noodles or spaghetti
  • 3 cups Vegetable broth
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 1 cup Carrots, julienned
  • 1 cup Snow peas
  • 1 medium Red bell pepper, sliced thin
  • 2 cups Bok choy, chopped
  • 2 stalks Green onions, sliced(optional)
  • 1 teaspoon Sriracha or chili flakes(optional)

Instructions

    In a large pot or deep skillet, combine the vegetable broth, soy sauce, sesame oil, minced garlic, and grated ginger.

    Bring the liquid to a boil over medium-high heat.

    Add the dry noodles to the pot, ensuring they are mostly submerged in the liquid.

    Reduce heat to medium and cook for about 5-6 minutes, stirring occasionally to prevent the noodles from sticking.

    Add the carrots, red bell pepper, and snow peas to the pot with the noodles.

    Continue to simmer for another 3-4 minutes until the vegetables are tender-crisp and most of the liquid has been absorbed into a thick sauce.

    Stir in the chopped bok choy during the last minute of cooking until just wilted.

    Remove from heat and garnish with sliced green onions and optional sriracha before serving.
