- 1 pound Ground beef
- 1 medium Yellow onion, diced
- 2 tablespoons Chili powder
- 1 teaspoon Cumin
- 3 cups Beef broth
- 15 ounces Tomato sauce
- 10 ounces Diced tomatoes with green chilies
- 2 cups Elbow macaroni, uncooked
- 2 cups Shredded cheddar cheese
- 1 to taste Salt and pepper
- 3 cloves Garlic, minced

In a large Dutch oven or deep skillet, brown the ground beef and onion over medium-high heat until the meat is no longer pink.

Drain any excess grease from the pan and stir in the minced garlic, chili powder, and cumin; cook for 1 minute until fragrant.

Pour in the beef broth, tomato sauce, and undrained diced tomatoes, stirring to combine.

Bring the mixture to a boil, then stir in the uncooked elbow macaroni.

Reduce heat to low, cover the pot, and simmer for 12-15 minutes or until the pasta is tender and most of the liquid is absorbed.

Taste and season with salt and pepper as needed.

Turn off the heat and stir in half of the shredded cheese until melted.

Sprinkle the remaining cheese on top, cover for 2 minutes to melt, and serve hot.
