Ingredients

Servings:8
  • 8 count Large flour tortillas
  • 12 count Large eggs
  • 1 lb Breakfast sausage or bacon
  • 2 cups Frozen tater tots or hash browns
  • 1 1/2 cups Shredded cheddar cheese
  • 1/4 cup Milk
  • 1 teaspoon Salt and black pepper
  • 4 oz Diced green chiles(optional)
  • 1 tablespoon Butter

Instructions

  1. 1

Cook the sausage or bacon in a large skillet until browned and fully cooked, then set aside on paper towels to drain.

  2. 2

Bake the tater tots or hash browns according to package instructions until crispy, then roughly chop if using tots.

  3. 3

Whisk eggs, milk, salt, and pepper together in a bowl, then scramble in a buttered skillet over medium heat until just set.

  4. 4

Warm the tortillas in the microwave for 20 seconds to make them pliable and prevent tearing during rolling.

  5. 5

Layer each tortilla with equal amounts of scrambled eggs, cooked meat, potatoes, cheese, and green chiles.

  6. 6

Fold in the sides of the tortilla and roll tightly to seal the filling inside.

  7. 7

Allow burritos to cool completely to room temperature before wrapping each individually in parchment paper and then aluminum foil.

  8. 8

Place wrapped burritos in a large freezer bag and freeze for up to 3 months; reheat in the microwave for 2-3 minutes.
