In a small bowl, mix the gochujang, gochugaru, soy sauce, and minced garlic to create the seasoning paste.
Arrange the chopped kimchi, sliced spam, and tofu in a wide, shallow pot or deep skillet.
Place the pork dumplings in the center of the pot on top of the other ingredients.
Pour the broth into the pot and add the prepared seasoning paste to the liquid.
Bring the stew to a boil over medium-high heat, stirring the paste gently to dissolve it into the broth.
Reduce the heat to medium and simmer for 8-10 minutes until the dumplings are cooked through and the broth has thickened slightly.
If using ramen noodles, add them now and cook for an additional 3 minutes until tender.
Drizzle with sesame oil and garnish with chopped green onions before serving hot.
