Ingredients
- 2 cups Peeled black-eyed peas
- 1/2 cup Water
- 3 tablespoons Granulated sugar
- 1/2 teaspoon Ground nutmeg
- 1 pinch Salt
- 1 teaspoon Vanilla extract
- 2 cups Vegetable oil for frying
- 1/4 cup Honey
- 1 tablespoon Powdered sugar(optional)
- 1/4 teaspoon Cinnamon(optional)

Soak the peeled beans in water for 10 minutes, then drain thoroughly.

Place the beans in a blender with 1/2 cup of water and blend until a very smooth, thick paste forms.

Pour the bean paste into a large bowl and add the sugar, nutmeg, salt, and vanilla extract.

Use a wooden spoon or whisk to beat the batter vigorously for 5 minutes to incorporate air and make it fluffy.

Heat the vegetable oil in a deep frying pan over medium heat until it reaches approximately 350 degrees Fahrenheit.

Scoop the batter using a small tablespoon and carefully drop it into the hot oil, forming small rounds.

Fry the fritters for 3-4 minutes, turning occasionally, until they are golden brown on all sides.
