Ingredients

Servings:5
  • 2 cups Peeled black-eyed peas
  • 1/2 cup Water
  • 3 tablespoons Granulated sugar
  • 1/2 teaspoon Ground nutmeg
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract
  • 2 cups Vegetable oil for frying
  • 1/4 cup Honey
  • 1 tablespoon Powdered sugar(optional)
  • 1/4 teaspoon Cinnamon(optional)

Instructions

  1. 1

Soak the peeled beans in water for 10 minutes, then drain thoroughly.

  2. 2

Place the beans in a blender with 1/2 cup of water and blend until a very smooth, thick paste forms.

  3. 3

Pour the bean paste into a large bowl and add the sugar, nutmeg, salt, and vanilla extract.

  4. 4

Use a wooden spoon or whisk to beat the batter vigorously for 5 minutes to incorporate air and make it fluffy.

  5. 5

Heat the vegetable oil in a deep frying pan over medium heat until it reaches approximately 350 degrees Fahrenheit.

  6. 6

Scoop the batter using a small tablespoon and carefully drop it into the hot oil, forming small rounds.

  7. 7

Fry the fritters for 3-4 minutes, turning occasionally, until they are golden brown on all sides.

  8. 8

Remove the fritters with a slotted spoon, drain on paper towels, and drizzle generously with honey while still warm.
