Ingredients
- 4 pieces Catfish fillets
- 1/4 cup Honey
- 2 tablespoons Smoked paprika
- 1 teaspoon Cayenne pepper
- 1 tablespoon Garlic powder
- 1 teaspoon Dried thyme
- 1 tablespoon Onion powder
- 4 tablespoons Unsalted butter
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper

Pat the catfish fillets completely dry with paper towels to ensure a good sear.

In a small bowl, whisk together the paprika, cayenne, garlic powder, onion powder, thyme, salt, and pepper.

In a separate small microwave-safe dish, melt 2 tablespoons of butter and stir in the honey until smooth.

Brush both sides of each catfish fillet generously with the honey-butter mixture.

Dredge the honey-coated fish into the spice blend, pressing firmly so the spices adhere to form a thick crust.

Heat a large cast-iron skillet over high heat until it just begins to smoke, then add the remaining 2 tablespoons of butter.

Place the fillets in the skillet and cook for 3-4 minutes per side until the crust is dark and charred and the fish flakes easily.

Remove from heat immediately and serve with a squeeze of fresh lemon if desired.
