Ingredients
- 1 1/2 cups Fine Semolina (Rava)
- 2 tablespoons All-purpose Flour
- 2 tablespoons Hot Oil (for dough)
- 1/2 cups Warm Water
- 1/2 teaspoons Salt
- 1/4 teaspoons Carom Seeds (Ajwain)(optional)
- 2 cups Vegetable Oil (for deep frying)
- 1 teaspoon Ghee(optional)

In a large mixing bowl, combine the fine semolina, all-purpose flour, salt, and carom seeds.

Pour 2 tablespoons of hot oil over the dry mixture and rub it in with your fingertips until it resembles breadcrumbs.

Gradually add warm water and knead into a stiff, firm dough; semolina absorbs moisture, so ensure it is not too soft.

Cover the dough with a damp cloth and let it rest for at least 20 minutes to allow the semolina to hydrate.

Divide the rested dough into small, equal-sized balls and roll them out into 3-inch circles of medium thickness.

Heat oil in a deep frying pan (kadai) over medium-high heat until a small piece of dough sizzles and rises immediately.

Gently slide a puri into the oil and press down lightly with a slotted spoon to help it puff up.

Flip and fry until both sides are golden brown and crispy, then drain on paper towels.
