Ingredients
- 2 packs Ramen noodles
- 4 slices Ham
- 0.5 large Cucumber
- 2 large Eggs
- 1 medium Tomato
- 3 tbsp Soy sauce
- 3 tbsp Rice vinegar
- 1 tbsp Sesame oil
- 1.5 tbsp Sugar
- 1 tbsp Red pickled ginger (beni shoga)(optional)
Instructions

Whisk the soy sauce, rice vinegar, sugar, and sesame oil in a small bowl until the sugar dissolves. Chill the dressing in the refrigerator.

Beat the eggs with a pinch of salt. Heat a lightly oiled pan and cook thin omelets. Once cooled, slice them into thin matchsticks.

Slice the ham and cucumber into thin matchsticks. Cut the tomato into wedges.

Boil the ramen noodles according to package instructions. Drain and immediately rinse under cold running water until the noodles are chilled.

Place the cold noodles in a shallow bowl. Arrange the egg, ham, cucumber, and tomato on top in sections.

Drizzle the chilled dressing over the dish and garnish with pickled ginger if desired.
