Ingredients

Servings:4
  • 500 grams Paneer (Indian Cottage Cheese)
  • 1 cup Fresh Cilantro (Coriander leaves)
  • 1/2 cup Fresh Mint leaves
  • 1/2 cup Greek Yogurt (Hung Curd)
  • 3 pieces Green Chilies
  • 1 tablespoon Ginger-Garlic Paste
  • 1 teaspoon Garam Masala
  • 1 tablespoon Lemon Juice
  • 1 1/2 cups Bell Peppers and Onions (cubed)
  • 1 tablespoon Mustard Oil
  • 1 teaspoon Salt

Instructions

  1. 1

In a blender, combine cilantro, mint, green chilies, and lemon juice to form a smooth, thick green paste.

  2. 2

In a large mixing bowl, whisk the Greek yogurt until smooth, then add the green paste, ginger-garlic paste, garam masala, salt, and mustard oil.

  3. 3

Cut the paneer into 1.5-inch cubes and prepare the vegetable chunks.

  4. 4

Gently fold the paneer and vegetables into the marinade, ensuring every piece is evenly coated.

  5. 5

Cover and refrigerate the mixture for at least 30 minutes to allow the flavors to penetrate.

  6. 6

Thread the marinated paneer and vegetables onto skewers, alternating between cheese and veggies.

  7. 7

Preheat a grill or oven to 400°F (200°C) and lightly grease the grates or a baking tray.

  8. 8

Grill for 10-12 minutes, turning occasionally, until the paneer is slightly charred on the edges and the vegetables are tender.
